We were invited Wednesday March the 14th at  Château Haut-Bailly in order to discover the 2011 vintage! 

Our impressions: this wine is a tribute to the terroir of  Haut-Bailly. The wine is freshtannic and has a good acidity. A wonderful wine!

The meal that followed was at the image of the wine:

~Artichoke pie with black truffle~

~Veal from Quercy, Roseval and parmesan~

~Blue chesse from Termignon with pear~

~Chocolate and cacao, caramel ice cream~

The whole was lovely matched with old vintages of Haut-Bailly:

  • Château Haut-Bailly 2000
  • Château Haut-Bailly 1995
  • Château Haut-Bailly 1983

One thing is for sure, the host is a good as the great wines from the estate!
